Taste creative artistry at Fairmont Singapore’s Anti:dote where ST subscribers get to enjoy a 20 per cent discount off food and beverages when they present the ST e-card (see sidebar on getting the e-card).

Anti:dote serves up more delicious fun in its revamped menus. Husband-and-wife team – head chef Tryson Quek, 30, and head bartender Bannie Kang, 28, share a chemistry that shines through new additions to the selection of cocktails and tapas.

The Clear Milk ($23++) is a beguiling cocktail made from clarified milk, butter rum and vanilla tea. The concoction is an original from Ms Kang, a South Korean, who was inspired by her favourite cherry ice cream.

“I wanted a dessert-like cocktail without the cloying creaminess of the dairy base, so I started thinking how I could make a lighter version of milk-based cocktail.”

She consulted Mr Quek, who helped with the preparation of the clarified milk and butter rum.

The charming cocktail is slightly tangy and carries the flavour of cocoa butter and smoky caramel notes.

For those with a penchant for classic cocktails, try the bourbon-based Brown Derby ($23++) that has a delightful balance of honey and fresh-squeezed grapefruit, or the aromatic and citrusy Corpse Reviver No. 2 ($23++) made with gin, house-made orange liqueur, housemade dry vermouth, lemon and absinthe.

Freshness is the overall theme and the tapas menu is a showcase of the region’s premium quality ingredients given a modern treatment. The Sea Urchin, Clam and Texture of Potato ($26++) is Mr Quek’s creative take on clam chowder but with impeccably fresh sea urchin as the star.

The Burnt Corn Taco with Smoked Riccota Cheese ($14++) is a tasty vegetarian offering. The tacos are served on a smoking miniature grill, lending a dramatic effect.

ST WINE PATRIARCHE MASTERCLASS

Get insights into Burgundy wines, which rank among the best wines in the world, at a new ST Wine Masterclass on Sept 23.

Two French wine experts will guide participants to taste and appreciate six wines from the famed Patriarche vineyards in Burgundy.

The masterclass will be led by Mr Roderic Proniewski, 50, wine director of Asia Wine Network; and Mr Vincent Goyat, 57, export director of Patriarche.

The two speakers will take you through the basics, from making sense of wine labels to gaining a deeper knowledge of Burgundy wines so you can select fine bottles with the best value.

Taste a range of Patriarche white and red Burgundy wines with unique qualities, including those not yet available on the market, such as the Gevrey- Chambertin 2014 and the Nuits Saint Georges 2012.
